Blackberry bircher parfait

Serves: 2 cups
- 1 cup oats
- 1.5 cups Provamel Soya Unsweetened drink
- 1 tbsp chia seeds
- ¼ cup sunflower seeds
- 1 tsp vanilla extract
- 1 cup Provamel Soya Alternative to Yogurt
- ½ cup blackberries
- ¼ cup of blackberries and blueberries
- 3 tbsp coconut flakes
- Mix all bircher ingredients together in a large jar or bowl and set aside for 15 minutes.
- In a small bowl, add blackberries and mash well with a fork. Mix into the Provamel Soya Alternative to Yogurt.
- Layer up jars with blackberry whip and top with bircher. Sprinkle over blackberries, blueberries and coconut flakes to finish.
