Blackberry bircher parfait

A deliciously creamy and filling protein packed breakfast, full of flavour and free of refined sugar.

Ingredients
Bircher muesli
  • 1 cup oats
  • 1.5 cups Provamel Soya Unsweetened drink
  • 1 tbsp chia seeds
  • ¼ cup sunflower seeds
  • 1 tsp vanilla extract
Blackberry whip
  • 1 cup Provamel Soya Alternative to Yogurt
  • ½ cup blackberries
Toppings
  • ¼ cup of blackberries and blueberries
  • 3 tbsp coconut flakes
Instructions
  1. Mix all bircher ingredients together in a large jar or bowl and set aside for 15 minutes.
  2. In a small bowl, add blackberries and mash well with a fork. Mix into the Provamel Soya Alternative to Yogurt.
  3. Layer up jars with blackberry whip and top with bircher. Sprinkle over blackberries, blueberries and coconut flakes to finish.
