Hello friends! Is it too early to say happy Spring? Technically no, but looking outside, you’d never guess! If you’re lacking a little sunshine too, these cheery lemon coconut tarts are here to brighten up your day! Gluten, refined sugar and dairy free, you’re gonna love em! Did I mention they’re no bake and take around 20 minutes to prepare?

I’ve made the filling with a lemon and coconut ‘curd’, tangy and sharp from the lemons but balanced out with cool and creamy coconut milk. I’ve added a little turmeric for the vibrant yellow colour and some maca powder for extra nutritional benefits, but both are optional. If you’re a big fan of natural colourings and want to know a bit more about getting those vibrant shades, check out my rainbow waffles.

I love lemons and can’t think of anything better than a tangy little tart to top off a delicious meal. They make a pretty lush afternoon snack too. This recipe makes a generous amount of lemon coconut curd, so you may have some left over. Delicious on oatmeal, pancakes or swirled into ice cream!

The buckwheat crust is the perfect nutty texture against the smooth curd, I love the texture of raw buckwheat. If you don’t have buckwheat, sub with almonds, walnuts or pecans. You’re going to love these tarts!

Serves: 6 mini tarts
Ingredients
Crust
  • 2 cups buckwheat
  • 1 tsp maca powder
  • 1 cup dates, pitted
  • 3 tbsp coconut oil
  • 75ml water
Curd
  • 3 tbsp maple syrup
  • 3 tbsp coconut oil
  • 1 tsp vanilla
  • 1 cup canned coconut milk
  • Juice of 2-3 lemons
  • ¼-1/2 tsp turmeric
  • 3 tbsp cornflour
  • 3 tbsp water
Toppings
  • Lemon rind
  • 2 slices of lemon, sliced into tiny segments
  • Toasted coconut
Instructions
  1. Prepare crust by blending buckwheat to a rough flour in a food processor. Add in maca, dates and coconut oil, pulsing until combined. Add water a tbsp at a time until a dough is formed. It should stick together easily.
  2. Grease tart tins with a little coconut oil and press the dough evenly into the tins. Leave to chill in the freezer while you make the filling.
  3. Add maple syrup, coconut oil, vanilla and coconut milk to a small pan and bring to a gentle simmer. Add in the juice of 2 lemons and ½ tsp turmeric. Taste and add more lemon if you like (I used 3 because I love the tang). If you'd like it more yellow, add a pinch more turmeric.
  4. In a small dish, mix cornflour with 3 tbsp cold water, to form a paste. While your curd is gently simmering, pour in the cornflour paste, stirring the curd as your pour. The mixture should thicken after a minute or two. Once thickened, take off the heat and allow to cool for a few minutes.
  5. Remove tart shells from the freezer. I like to loosen my tart shells first so I can eat as soon as possible! They should just pop out from the bottom of the tins, but if not, gently dip the bases into a small bowl of hot water for a second or two before removing.
  6. Pour spoons of lemon coconut curd in tart shells and set aside in the fridge to chill for an hour, or until the top has set. Top with lemon rind, toasted coconut and little lemon slices. These keep well in the fridge for up to four days.

Blueberry muffin oats (makes 2 small jars)

- 1 cup oats
- 1 cup water
- 1 tbsp poppy seeds 
- 1 tsp vanilla extract 
- 1/2 lemon, juice and zest

Blueberry Jam

- 1 cup blueberries	
- 1 tbsp chia seeds	
- 2 tbsp syrup 

Topping 

- Fresh blueberries 
- 3 tbsp dairy free whipped cream or yoghurt
- 1 tsp lemon zest 
- 1/4 tsp poppy seeds 

Mix oats, water, poppy seeds, vanilla, lemon juice and zest together in a bowl and set aside to thicken for at least an hour or overnight. Prepare the chia jam by adding blueberries, chia seeds and syrup to a small pan over a medium heat until bubbling. Stir well for a few minutes until thickened. Allow to cool then layer up a jar with oats and jam. Top with poppy seeds, lemon zest, dairy free whipped cream and more fresh blueberries.
