Best Ever Pumpkin Muffins

7th October 2026 by bos.kitchen Leave a Comment

These pumpkin muffins have been a labour of love but so worth it! These are crazy soft and tender with a melt in your mouth texture and an addictive cinnamon crumble and maple drizzle. There’s a healthy sprinkle of pumpkin spice in these too which just gives me all the Autumn feels. Not only do they taste incredible, they are dairy free and really easy to make. The batter comes together in one bowl and everything is made with simple ingredients you’ve probably already got in your pantry. One bite of these and you’ll be in love! Trust me when I say these are the BEST pumpkin muffins.

Read more: Best Ever Pumpkin Muffins

When the temperature starts to drop I love nothing more than turning the oven on and spending some time in the kitchen baking. The house gets warm and cosy and the smell of something sweet baking is so comforting. I find the whole process incredibly therapeutic and relaxing, even when the kids are being wild it’s my chance to zone out for a moment. It’s a good job I enjoy it so much because I made five batches of pumpkin muffins testing this recipe! The final result is a wonderful pumpkin muffin that’s moist, gently spiced and perfectly sweetened.

Why you should make these Pumpkin Muffins –

  • Soft, tender pumpkin muffins with a melt in your mouth texture
  • Perfectly sweetened so can be enjoyed at any time of day
  • Keep fresh in a cake tin for up to four days
  • Made with simple pantry ingredients
  • Topped with a crunchy cinnamon crumble

How to make these Pumpkin Muffins

Before you prepare the batter, make the cinnamon crumble. This comes together easily in a small bowl and is made by mixing together flour, butter, sugar and cinnamon with your fingers until a fine crumble is formed. Then to make the muffin batter, simply whisk all the wet ingredients and sugar together then fold through the dry ingredients. It’s important to only fold everything together until just combined, this keeps the muffins light and fluffy.

Then scoop the batter into your prepared muffin tin and sprinkle over the cinnamon crumble. Bake for 24-26 minutes, or until a toothpick comes out clean. I like to bake my muffins in two batches, set apart in the baking tin as this allows for more hot air to circulate around the muffins, meaning they’ll come out taller. Let them cool in the tin for 10 minutes before transferring to a cooling rack. While they are cooling, make the two ingredient maple drizzle. Then drizzle over the muffins with a spoon or piping bag and sprinkle over a few pumpkin seeds.

Cook Time 25 minutes mins
Course: Breakfast, Dessert, Snack
Ingredients Method

Ingredients

Wet
  • 1 cup pumpkin puree
  • 1 cup light brown sugar
  • 1/2 cup vegetable oil
  • 3/4 cup dairy free mylk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
Dry
  • 2 cups plain flour (spooned and levelled)
  • 1 tbsp pumpkin pie spice
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
Crumble
  • 6 tbsp plain flour
  • 5 tbsp light brown sugar
  • 1 tsp cinnamon
  • 3 tbsp dairy free butter (cold, from the fridge)
Maple drizzle
  • 1/2 cup icing sugar
  • 3-4 tbsp maple syrup
Optional
  • 1/4 cup pumpkin seeds

Method

  1. Preheat oven to 180•c and line a muffin tin with liners.
  2. For taller muffins, consider baking these in two batches. Fill your muffin tin with 6 liners, spaced apart so that they can have more room to rise. When baked, remove and add another 4 liners to bake the remaining batter.
  3. Prepare the cinnamon crumble by adding all crumble ingredients to a small bowl and mixing together with your fingers or a knife until a fine crumble has formed. Set aside.
  4. Now to make the muffins. Add all wet ingredients to a large bowl and whisk together until smooth. Pour in the dry ingredients and fold through until just combined, it's okay if a few lumps of flour remain.
  5. Scoop the muffin batter into your prepared tin and sprinkle about a tbsp of crumble over each muffin. Bake for 24-26 minutes, or until a toothpick comes out clean. Remove from the oven and allow to cool in the tin for 10 minutes before transferring to a cooling rack.
  6. While the muffins are cooling, prepare your icing by mixing icing sugar and maple syrup in a small bowl. Once the muffins have totally cooled, drizzle over the icing and top with a few pumpkin seeds.

Lemon and raspberry tart

8th March 2023 by bos.kitchen Leave a Comment

Jump to Recipe

This lemon and raspberry tart is the perfect way to celebrate the start of spring. Fresh, zingy, sour lemon pairs with tart, sweet raspberries to create this dreamy dessert. A simple shortcrust pastry shell is filled with an easy vegan lemon curd and swirls of fresh raspberry puree. It’s then topped with dairy free whipped cream and more raspberries. The flavours in this tart are so bright and zingy, a must for lemon lovers!

raspberry lemon tart vegan

This raspberry lemon tart is a total flavour party. If you love all things lemon, you’re going to love this! It’s tangy, zingy, sweet and totally mouthwatering. It might look fancy, but the only thing that needs baking is the tart shell and then everything else comes together really quickly.

I chose to pipe the whipped cream on top but you could leave it off altogether and just serve with your favourite dairy free cream on the side if you prefer.

Why you’re going to want to make this raspberry lemon tart –

  • Full of real tangy fresh lemon and sweet raspberries
  • Easy to prepare with only 15 minutes of baking required
  • Made with pantry ingredients
  • Comes together in less than 45 minutes

Stuffed pumpkins

stuffed pumpkins with giant cous cous

Say hello to my new favourite way to eat pumpkins – stuffed full of goodies! These little babes were sitting in my kitchen for the last couple of weeks and I was desperate to find a way to use them whilst keeping their pretty shapes in tact.

The whole thing is ready in the time it takes to cook the pumpkins, so around 45 minutes. Perfect for a midweek meal or a party with friends, they’re sure to be a talking point at the dinner table. I’m crushing on their little hats too, so cute!

They’d be great for Christmas or Thanksgiving, anything with cranberries and pomegranate always makes me feel like winter has arrived.

Peanut butter chocolate tart

peanut butter chocolate tart

Chocolate and peanut butter are two of life’s great pleasures, don’t you think? Combined, they create something simply irresistible. I’ve loved peanut butter for as long as I can remember, I basically lived on peanut butter on toast through most of my school years. It seemed only fitting that I continue the peanut butter obsession with this decadent, creamy dessert. This tart is a MUST for anybody who loves peanut butter and chocolate! …
